There?s something about making something from scratch, with your own two hands that?s just so satisfying. That?s probably why I love baking and cooking so much. I adore being able to make something and then share that creation with other people. Seeing other people enjoying my food is so satisfying. I show people I love them with food.

My friend Barb and I have this in common. I saw this quote above on her site and it?s so true. Barb loves to cook, entertain, to share her food in the company of good friends and family. These are some of her most endearing qualities. A few months back, Barb did a post about making homemade Limoncello. She mentioned how she loved to share homemade liqueur with her guests and I was immediately intrigued. ?I have never made my own?liqueur. Her post illustrates just how easy it is to do.

So I did it!?All it takes is some alcohol, lemon peels and some patience. About 4 weeks of patience to be exact. The result is a liqueur made from scratch by you which means you?re in total control of the final product and really, it just feels so good to have made this Limoncello yourself. Limoncello is so sweet and refreshing. I love using it as an ingredient in cocktails. I combined my Limoncello with blueberries and fresh mint then I topped it off with sparkling water for a refreshing summer drink. It?s fruity, citrusy, fizzy and satisfying. This drink is perfect for lounging on the back deck with friends on a warm summer evening.

Blueberry Limoncello Sparkler

Blueberry Limoncello Sparkler

A cool, refreshing drink of blueberries, limoncello and fresh mint.

Ingredients

  • 1/2 cup water
  • 1/2 cup sugar
  • 1 cup fresh blueberries
  • 3 tablespoons simple syrup (made from water and sugar above)
  • 1 1/4 cup chilled Limoncello, divided
  • 10 fresh mint leaves
  • 1 cup cold sparkling water

Instructions

  1. In a saucepan combine the water and sugar. Stir over medium-high heat until it comes to a boil and all the sugar has dissolved. Set aside and cool completely.
  2. In a blender, combine the blueberries, cooled simple syrup, 1/4 cup Limoncello and mint leaves. Blend to until smooth. Strain, if desired. Chill until cold.
  3. Add the remaining Limoncello and stir to combine.
  4. Divide the mixture among 4 glasses and top with sparkling water.
  5. Enjoy!
